Craving a cozy, spiced treat that's full of flavour and just the right amount of kick? These Vegan Ginger Cookies, featuring Montezuma’s Spice It Up chocolate, are the perfect balance of warming spices, a subtle coffee undertone, and a chocolatey finish. Plus, they’re made with plant-based ingredients, so you can enjoy them guilt-free.

Ingredients:

  • 3/4 cups vegan butter (softened)
  • 3/4 cups brown sugar
  • 2 tsp coffee powder (dissolved in 1 tbsp hot water)
  • 2 tsp vanilla extract
  • 3 tbsp aquafaba (or 1 flax egg)
  • 2 tbsp molasses
  • 2 + 1/4 cups plain flour
  • 1 + 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 2 tsp ginger powder
  • 1/2 tsp mixed spice
  • Granulated sugar for rolling
  • 1 + 1/2 bars of Montezuma’s Spice It Up chocolate

Method:

  1. Preheat the Oven: Begin by preheating your oven to 180°C (conventional) or 160°C (fan oven). Line two cookie baking sheets with parchment paper, and get ready for some seriously satisfying baking!

  2. Cream Together the Butter and Sugar: In a large mixing bowl, cream together the softened vegan butter and brown sugar. This will create a smooth and creamy base for your cookies.

  3. Add the Wet Ingredients: To the butter-sugar mixture, add the dissolved coffee (a warm, deep flavour boost), vanilla extract, molasses, and aquafaba (or flax egg). Mix until fully combined.

  4. Mix the Dry Ingredients: Next, add the flour, baking soda, salt, cinnamon, ginger, and mixed spice. Stir until just combined, forming a dough.

  5. Form the Dough Balls: Scoop the dough into 12 evenly sized balls. Roll each one in granulated sugar for a little extra crunch and sweetness.

  6. Bake the Cookies: Place six dough balls onto each baking sheet, leaving enough room for the cookies to spread. Bake for 10-11 minutes, or until the cookies are slightly golden and flattened.

  7. Perfect the Shape: If needed, once the cookies come out of the oven, use a large cookie cutter to scoot the cookies into perfectly round shapes while they’re still warm.

  8. Cool and Drizzle: Let the cookies cool completely on a wire rack. Meanwhile, melt down the Montezuma’s Spice It Up chocolate bars. Once melted, drizzle the chocolate generously over the cooled cookies.

  9. Finish with a Sprinkle: Top the cookies with a pinch of flaky salt and crunchy sugar for the perfect finishing touch.
